Oatmeal bars for a boost of energy

Since dead week and finals week are looming just around the corner, here is an energy booster to help keep your stomach satisfied during the study sessions and all-nighters.

Ingredients

  • 1 1/3 cups rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup ground unsalted cashews
  • 2 tablespoons chia seeds
  • 1 tablespoon ground flax meal
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1/2 cup honey, warmed
  • 1/3 cup peanut butter
  • 1/2 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Line a square baking dish with aluminum foil.
  3. Whisk oats, flour, ground cashews, chia seeds, flax meal, cinnamon and sea salt together in a large shallow bowl.
  4. Stir warmed honey, peanut butter and vanilla extract together in a bowl until well-mixed.
  5. Pour honey mixture into oat mixture; stir until batter is well-combined.
  6. Turn batter out into a prepared baking dish.
  7. Distribute in the baking dish evenly.
  8. Bake in the preheated oven until golden and fragrant, about 12 minutes.
  9. Pull aluminum foil from baking dish and cool bars in the aluminum foil for 10 minutes; remove and discard aluminum foil. Cut into bars.
