Readers, Digest: New Orleans sausage, rice dish

If you take a late-night stroll down Bourbon Street in New Orleans, you will hear jazz music and see wrought iron railing on balconies on either side of the street, enclosing restaurants and bars with delicious dishes.

New Orleans has an iconic culture, architecture and food, all depicted in The CW’s popular show, “The Originals.” The premiere of the second season Oct. 6 inspired me to make a sausage, rice and broccoli dish with a touch of Cajun seasoning.

Total Time: 35 minutes

Yield: 3 servings

Ingredients:

  • 1 precooked sausage
  • 1/2 cup broccoli florets
  • 1/2 cup uncooked brown rice
  • 1 cup water
  • 1 teaspoon olive oil
  • black pepper, cayenne pepper and dried oregano to taste

Directions:

  1. Heat water in a small saucepan until it boils. Add rice and simmer for 30 minutes on low heat until the rice is cooked.
  2. Using a sharp knife on a cutting board, slice the sausages into smaller pieces, resembling half-moons.
  3. Next, cut off broccoli florets and cut those into smaller pieces about the same size as the sausages.
  4. In a medium-sized frying pan, add 1 teaspoon olive oil and put the sausage and broccoli on medium heat for 7 minutes.
  5. Add pepper, cayenne pepper and oregano to the frying pan and season to desired taste.
  6. As a final step, add the cooked rice to the sausage and broccoli and serve in a bowl.
