Readers, Digest: Back-to-school Bidwell Bars

The new school year is upon us, which means the return of homework, tests and projects. These dried fruit bars are simple to make and a perfect on-the-go snack for the busy beginning of the school year.

Total time: 40 minutes

Yield: 10 bars

Ingredients:

  • 1/2 cup flour
  • 3 eggs
  • 1/2 cup milk
  • 1/4 cup raisins
  • 1/4 cup dried apricots, chopped
  • 1/4 cup dried pitted prunes, chopped

Directions:

  1. Preheat the oven to 325 F.
  2. Mix flour, eggs and milk to a batter in a medium-sized bowl.
  3. Using a sharp knife, chop the dried apricots and dried prunes into smaller pieces on a cutting board so they are roughly the same size as the raisins.
  4. Next, add the dried fruit to the batter and stir all of the ingredients together.
  5. Lightly spray an 8×8 glass pan with olive oil to prevent sticking.
  6. Once the pan is sprayed, add in the batter.
  7. Place the glass pan into the oven and bake for 30 minutes.
  8. Allow the pan to cool, then cut into 10 individual bars.
