The Olympics are among my favorite events to watch on television. I am inspired by the athletes and the amount
of time they spend training to reach their level and skill.

Smoked salmon appetizers and snacks arranged in the shape of the Olympic
rings are
perfect for an opening ceremony viewing party.

Although smoked salmon contains
more sodium than cooked salmon, it contains potassium.
Potassium is needed for a regular heartbeat and to keep muscles working properly, both of which are important to athletes.

SOCHI SMOKED SALMON APPETIZERS
Total Time: 10 minutes
Servings: 8
2 slices whole wheat bread, cut into 8 squares
1 ounce cream cheese
1 package of smoked salmon
8 small sprigs of fresh dill, for garnish
Cut each slice of bread into four squares. Spread cream cheese onto each piece of bread.
Cut smoked salmon into small pieces to top bread. Garnish each
smoked salmon appetizer with a sprig of dill.

OLYMPIC RINGS SNACK TRAY
Total Time: 5 minutes
Servings: 2
1/2 cup blueberries
1/2 cup chocolate chips
1/2 cup raspberries
1/2 cup tortilla chips
1/2 cup guacamole
Arrange five dishes into the shape of the Olympic rings. Put
ingredients into the dishes based on the Olympic rings’ colors: place blueberries, chocolate chips and raspberries on top from left to right, with tortilla chips and guacamole on the bottom from left and right, respectively.
