Start the day off right with this crispy, gold breakfast mash

In the words of Ralph Waldo Emerson, “Tomorrow is a new day. You shall begin it serenely.”

Without breakfast, my head feels fogged up and I can’t concentrate over the appalling and embarrassing sounds of my own stomach.

I like to do myself a favor each morning and start the day off with a kick. Here’s one of my five-step secrets to get out the door grinning like a post-pubescent fat kid who just called himself out of gym class for the first time.

Step 1

Throw some diced potatoes in a pan with olive oil. With the heat on high, flip them around periodically while they sizzle and crackle. Once the potatoes look golden brown and the oil is dried up, drop the heat to medium.

Step 2

Time to add seasoning. Add garlic salt, a dash of regular salt, crushed basil, dill weed, rosemary, black pepper and anything else your nose thinks should join the party.

Step 3

Add some substance. Start by tossing in a couple eggs and some spinach. Mix with the potatoes on medium heat. Be careful when mixing, you don’t want to mash the potatoes. Let the eggs and spinach cook while keeping the potatoes crispy.

Step 4

Now that you know your salivary glands are working, get ready to top things off. Add some shredded cheddar cheese to the pan. Once the cheese melts, drop the heat to low and toss everything together a bit.

Step 5

Lastly, add some sauces. This, like the seasonings, depends on your tastes. Personally, I like to add Tapatío and Tobasco Green Pepper sauce to the mix.

Once finished, you have a decision to make. Either eat the breakfast mash with a fork or throw it into a tortilla with bacon for a breakfast burrito made for the Gods. Either way, your morning just got off to a pretty tasty start.
