Readers, Digest: Chicken goat cheese tacos

These chicken goat cheese tacos contain nutrients found in many of the main food groups, including protein, dairy and vegetables. This is why I love tacos; you can layer on different types of ingredients or add as much or as little of each ingredient as you wish.

For those who may be lactose-intolerant, goat cheese actually has less lactose than regular cheese and is easier to digest.

Total Time: 20 minutes
Yield: 2 tacos

Ingredients

  • 2 corn tortillas
  • 1/4 cup diced tomato
  • 1/4 cup sliced red onion
  • 1 teaspoon olive oil
  • 2 tablespoons crumbled goat cheese
  • 2 pieces of chicken breast

Directions

  1. In a medium-sized pan, heat up olive oil. On medium heat, cook chicken breasts for 10 minutes or until fully cooked and browned.
  2. With a knife, slice the onion into thin slivers and dice the tomato while chicken is cooking.
  3. Once the chicken is fully cooked, cool for 5 minutes, then dice.
  4. Place corn tortillas in the microwave for 20 seconds, to make them more soft and less likely to crack.
  5. Assemble the tacos by layering all of the ingredients on top of the tortilla: chicken, onion, tomato and goat cheese.
  6. As a last step, fold the tortillas in half to make the tacos.
