    Readers, Digest: Romantic red velvet pancakes

    Valentine’s
    Day is approaching and that means trying to plan something special for the
    person you love.

    I
    find that love can be expressed in many ways and it doesn’t always have to
    be with material things. This recipe will sweeten your Valentine’s Day morning.


    RED VELVET PANCAKES
    Total
    time: 15 minutes

    Yield:
    16 small pancakes

    1 1/2 cups all-purpose flour
    2 tablespoons unsweetened cocoa powder
    2 tablespoons granulated white sugar
    1/3 cup powdered sugar
    1 1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1 teaspoon ground cinnamon
    1 teaspoon salt
    1 1/2 cups buttermilk
    2 large eggs
    1 teaspoon vanilla extract
    2 tablespoons white vinegar
    1 tablespoon red food coloring (red gel paste will get the dark red seen in the recipe)
    4 tablespoons (1/2 stick) salted butter, melted

    Heat a pan or pancake griddle over medium heat.

    Mix all of the dry ingredients together in a large bowl. Mix the buttermilk, eggs, vanilla, vinegar and food coloring in another bowl.

    Whisk the buttermilk mixture and dry ingredients together. Then, gently pour the melted butter into the mix.

    Pour the batter by 1/4 cup onto the pan and let it cook until bubbles form on top, after about 2-3 minutes. Flip and cook cakes for another minute before removing from heat.

    Top with powdered sugar and serve.
