Readers, Digest: Popeye egg scramble

In the famous Popeye comics and cartoons, Popeye’s strength increases dramatically after he opens up a can of spinach and eats it, giving him the ability to defeat his attackers.

Though this image is comical, there may be some truth to spinach helping with muscle performance.

Spinach contains iron, which helps transport oxygen throughout the body. Providing enough oxygen to muscles is important in everyday life and especially when working out.

Total Time: 35 minutes

Yield: 3 servings

Ingredients:

  • 3 eggs
  • 3 cups spinach
  • 3 mushrooms, diced
  • 1/4 cup onion, diced
  • 1 tablespoon olive oil
  • 1 yellow bell pepper

Directions:

  1. First, dice up the mushrooms, onion and bell pepper.
  2. Next, add olive oil to a medium-sized frying pan and fry up the diced vegetables.
  3. In a small bowl, crack 3 eggs, then mix with a fork.
  4. Next, add some olive oil to a frying pan, then add the eggs. As the eggs begin to cook, scramble by stirring.
  5. In another frying pan, add some olive oil and 3 cups of spinach. Place a lid on top of the spinach to steam it.
  6. As a final step, combine the cooked vegetables, eggs and spinach in a large saucepan and stir to mix all of the ingredients together.
